The Mandela varietal, a rare hybrid developed for exceptional cup quality, thrives at high elevations where slow maturation produces cherries of exceptional density and sweetness. This lot undergoes a precision-controlled natural anaerobic fermentation, where whole cherries ferment in sealed tanks to intensify aromatics and elevate complexity before slow drying to lock in purity and structure.
