Nestled in the southern mountainous region of Guatemala, the Santa Rosa area is home to 250 smallholder farmers who contribute to Boqueron coffee. These dedicated farmers harvest the coffee cherries between December and February, ensuring the crop is at its peak ripeness. They deliver their cherries to the wet mill in one batch, guaranteeing the best results and uniformity of the crop.
Once at the mill, any small sticks and leaves are removed, and the cherries are sun-dried on patios until they reach a desired moisture content of 12%.
The mill processing the coffee in this region holds the Rainforest Alliance Certification. This recognition has enabled farmers and mill operators to make positive changes for the community, such as installing a water treatment facility.
The careful selection of cherries during harvest and natural sun-drying imparts this coffee with delightful notes of strawberry, cherry, tropical fruit, and caramel.
